Berry Swirl Popsicles

These popsicles are easy to make, delicious, and they’re good for you, too.   All you need is your favorite fresh fruit, some yogurt, and  you’re ready to go.  Whip all of the ingredients together in your blender, pour it into popsicle molds,  and freeze.  Actually, there’s an extra step in there to get the swirl, but it’s not important right now.

Berry Swirl Popsicle 1.1In a few short hours, you will have popsicles that are healthy enough to eat for breakfast.  You’d be okay feeding your children fruit and yogurt for breakfast, wouldn’t you?  Imagine their faces if you were to hand them a popsicle for breakfast.Berry Swirl Popsicle 1.3My children, being mutants, would probably complain.  Once, I forgot to thaw the meat for dinner, and we were already running late for dinner. Since I knew that the kids were hungry, I gave each one a dessert cup full of chocolate pudding topped with whip cream and sprinkles to eat as a snack while I thawed the meat and cooked dinner.  They were going to have pudding for dessert, so I saw no harm.  That was the day I really began to suspect that my children weren’t like other people’s kids.  Food Critic and Sue Chef looked at the pudding then called me back as I was walking back to the kitchen.

“What is this?”  Sue Chef asked as Bus Boy inserted his spoon into his cup.

“Pudding.”  I was concerned that she had hit her head at school and was showing signs of brain damage.

“Mom, you’re supposed to feed us healthy food.”  Food critic replied.

Bus Boy stopped with his arm raised half way to his mouth and considered his brother.

“Pudding contains milk.  Milk is good for your growing bones.  Besides, people should eat dessert first once in a while.”  I tried for a save.   Bus Boy remained frozen.

The “twins” as we call them, gave me a look that made me feel about 10 inches tall before they both handed the cups pudding out for me to take.

“What kind of a mother are you?  Food Critic accused.

“You should know better than to give us dessert first.”  Sue Chef continued his thought.

Meanwhile, Bus Boy still held his spoon, overfilled with pudding,  midway to his mouth.    Reluctantly, he put the spoon, pudding and all,  back into the cup and,  grudgingly, gave the pudding back to me as his siblings handed over theirs.

They waited for dinner, then had their dessert.   I love my kids, but sometimes they can be really strange.

Curious, I asked Sue Chef, who is now a bit older, if she thought that it would be okay to eat one of the Berry Swirl popsicles for breakfast since they only contained fruit and yogurt.  Her response, after careful consideration, was “I guess it’d be okay,” but she gave me a very strange look.    I don’t think she’s a believer.  I hope your children are more receptive to the idea.   Think of this–  Breafast Popsicles you dunk into granola.  It could be the best breakfast idea since pop-tarts.  Baker’s Man says “…or maybe, NOT!”    Berry Swirl Popsicle 1.2Have any other food bloggers noticed that the ends of their popsicles tend to disappear when they ask their children to hold them while photos are taken?

Berry Swirl Popsicles

Fresh fruit and flavored yogurt are all that's needed to make these delicious, and healthy, frozen treats that your kids are sure to love. Cook's Note: If you don't have fresh fruit, frozen berries can also be used.
Ingredients
  • 1 (6 ounce) container of blueberry yogurt (light or regular)
  • ¾ cup blueberries
  • 1 (6 ounce) container of strawberry yogurt (light or regular)
  • 1 cup sliced strawberries
  • Sugar or honey (optional--we didn't use this)
Instructions
  1. Place strawberry yogurt and strawberries into blender or food processor
  2. Blend or process until smooth and berries are mostly pureed and well incorporated.
  3. Spoon this into the bottom half of popsicle molds.
  4. Place blueberry yogurt and blueberries into blender or food processor. No need to rinse it out.
  5. Blend or process until smooth and berries are mostly pureed and well incorporated.
  6. Spoon this on top of the strawberry layer in the popsicle molds.
  7. To get the swirl effect, stick a long handled spoon into the popsicle mold and lift it up and down a three or four times while spinning it around in a circle. This will create a bit of a swirl.
  8. Place sticks or lids in the popsicle molds.
  9. Place in freezer for 2 -3 hours or until frozen solid.
