Sauteed spinach is a simple and delicious side dish that is ready to serve in about 15 minutes. The combination of garlic, salt, and lemon juice bring out the flavor of this delicious and nutritious leafy green vegetable. This is the perfect way to prepare fresh spinach from your garden or the Farmer’s Market.
All you need to do is saute some garlic in a little olive oil, toss in the spinach and let it wilt. It’s perfectly okay if your pan looks too small for the volume of spinach. In fact, it takes about a pound of raw spinach to give you one cup cooked. This might make you wonder why I bother. The reason is simple. I frequently find myself in possession of fresh spinach. Spinach, being a delicate green is easiliy bruised which causes it to spoil quickly in the fridge. Our first use for spinach is always salads, but if we have more than we can use in salads, sauteed spinach is always a welcome addition to the menu.
If you’re a frequent visitor to my website, you will notice that there are some similarities between this recipe and the one for beet greens I posted in June. That’s because most greens get a boost of flavor from the combination of members of the Allium family and some type of acid. My mom almost always used apple cider vinegar, but I’ve branched out since being on my own and have used many different variations with different greens. Lime juice is my favorite addition to spinach.

- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 12 ounces package of fresh baby spinach (7½ to 8 cups fresh spinach)
- ⅛ teaspoon kosher salt
- ½ to 1 teaspoon fresh lemon or lime juice
- Heat oil in skillet.
- Add garlic to hot oil.
- Saute for 1-2 minutes until garlic begins to soften but don't let it burn or it will be bitter.
- Add spinach to pan and stir constantly until the spinach is wilted.
- Sprinkle with salt and mix well.
- Stir in lemon or lime juice just before serving.
